Tuna Salad

I love how easy dinner is expected to be in the warmer months; tuna salad is a staple in our house during the week in the summer.  Isis requested this for dinner last night so I thought it would be fun to share the recipe here on the blog. :)  Making this literally took 15 minutes.  I love quick, easy and yummy dishes.  The measurements will vary for this one.  Here's what I did {my batch easily and heftily served 4}:

{Shred a carrot or two until you have about a 1/4 cup, finely dice about a tablespoon of red onion and boil and chop 3 eggs.  My rule is 3 eggs, per 2 cans of tuna.}

{Now let's talk tuna.  I ALWAYS use solid white albacore.  In water.  There are many variations of canned tuna but in my opinion, this is the best.  Do not get the "chunk light" or the tuna packed in oil for this.  The solid white is meatier and works the best. :)  Open your tuna cans and drain the water really well.  Dump the fish in a medium mixing bowl and begin your dressing.}

{For the dressing, it is important to go easy on the mayo.  I used a 1/4 cup and about a tablespoon.  Start small and work more mayo in at the end if you need to. In a small bowl, add the mayo, a teaspoon of yellow mustard and a tablespoon of sweet relish.}

{Now it's time to season up the dressing.  To that same bowl,  add 1 and a half teaspoons of seasoning salt, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of celery seed, 1/2 teaspoon of dried oregano, 1/2 teaspoon of black pepper and 1 tablespoon of dried parsley.}

{Whisk well to combine.} 

{Dump your chopped carrot, onion and egg to the bowl with the drained tuna and mix.}

{Add your dressing to the tuna mixture and gently fold this until fully combined.  If possible, let this sit in the fridge for at least an hour for the flavors to meld.  This is optional, of course - I wasn't able to do that and it was still absolutely divine!}

{I enjoyed mine with honey wheat crackers and a fresh blueberry and pineapple salad. So good!  Cory and the kiddies had tuna sandwiches with lettuce and tomato on toasted potato bread.  Such a quick and delicious dinner!}
