I may be a bit obsessed with and making appetizers. I love making simple and flavorful starters for dinner guests that can also double as snacks for unexpected company or a Saturday night with wine and a good movie.
This bean spread was super simple and really satisfying. My kind of dish! :)
{Gather these simple ingredients. The cilantro is optional - I find that most people either love or hate it. I happen to love it!}
{Start with melting 3 tablespoons of butter in a hot skillet.}
{Add half a medium onion, sliced.}
{Saute for about 7 minutes, or until brown and golden. Season to taste with salt, pepper and garlic powder}
{Add your can of drained cannellini beans.}
{Mix well, reduce the heat and let these flavors meld while you prepare your crostini.}
{Slice a fresh French baguette into thin rounds. My absolute fave. I could probably eat an entire loaf. Toasted with butter, of course!} :)
{Line your slices up and toast them until golden under the broiler.}
{Careful not to burn them, it only takes a couple of minutes for these to get golden.}
{Once they are brown, brush them with melted butter.}
{Warm and buttery. mmmmmm!}
{You will need a food processor or blender for this. This one is my new favorite. I love that it comes with smaller personal cups for making one smoothie at a time. I've also been making my own salad dressings for work lunch salads during the week. So perfect!}
{Add your warm beans to the blender. Also add in 1/4 cup of olive oil to start. You may need more, depending on how your blender works. You need enough oil to get the mixture going. Taste for seasoning and blend until nice and smooth.}
{Serve it in a pretty dish and top the bean spread with chopped cilantro and a sprinkle of paprika.}
Grab a warm crostini, spread on your white bean goodness and enjoy! ...with a glass of white or red wine... if you enjoy wine, that is. White for me please. ;)
