About 2 weeks ago, I had the most amazing taco salad from a deli in the city for lunch and I had been craving it for the rest of the week. I decided to come home and recreate it. ...and I think I like my version better. :) This is so very easy and extremely tasty. Minus the small bowl I was able to pack for lunch the next day, we finished the whole thing! Be sure to sprinkle with fresh chips if you have leftovers to enjoy.
Ingredients:
1 pound Lean Ground Turkey
2 Cups Cheddar Cheese
1 Head of Iceberg Lettuce
1/2 Red Pepper, Chopped
1/2 Onion, Chopped
1/2 Cup Salsa
1 Ripe Tomato, Chopped
1/2 Can Black Beans, Drained
1/2 Cup Catalina Salad Dressing
1/2 Cup Ranch Salad Dressing
1 Packet of Taco Seasoning
1 Cup Crushed Tortilla Chips, extra for garnish
Optional: Sour Cream and Avocado
{Gather your delicious ingredients. I used both HOT salsa and HOT taco seasoning. Gave this a nice kick.}
{Chop your onion and pepper. I love using red peppers, they give such a sweetness, especially when sauteed.}
{Saute your ground turkey with the chopped pepper and onion.}
{When the turkey, onion and pepper start to brown, sprinkle in the taco seasoning and continue to cook until brown.}
{Meanwhile, clean and chop your head of lettuce.}
{When the meat is nicely browned, drain it on paper towel to remove the excess oil and juices.}
Begin to dump your ingredients into a large mixing bowl. First your lettuce. Then the cheese.
{Add in the chopped tomato.}
{And your black beans.}
{Then your seasoned ground turkey.}
{Scoop in the salsa.}
{Roughly mix to combine.}
{Next in goes your dressing. Add in the sweet and tangy Catalina.}
{Then the cool and creamy Ranch.}
{Mix thoroughly to get every piece coated with dressing.}
{Crunch the tortilla chips. I like to use Multigrain, it adds a nice texture. You could also use Doritos...YUM!}
{Add the chips to the mixed salad and mix again. Save a few to sprinkle on the top, once plated.}
{Serve with a sprinkle of chips, dollop of sour cream and sliced avocado.}
