The dog days of summer are upon us and it is HOT here in Philly. So hot that the thought of cooking over a stove or even eating a warm meal when it is 90+ degrees out makes me break out into a sweat, LOL.
Dinner for us has been cool and refreshing. Cucumber salad, club sandwiches, chicken salad, etc. I like to have fruit and yogurt parfaits for dinner. So filling and refreshing and oh so DELICIOUS! :)
Here's what I do:
{I like to chop pineapple and strawberries really small and then add blueberries. I let them sit in the fridge {or freezer} together until the juices develop and everything gets nice and icy cold. Any fruit would work for this. I also love adding chopped up peaches when we have them.}
{I like to use strawberry yogurt, but I have also used plain or vanilla and it's still delicious. Any flavor would work, really. Your favorite brand of granola is just fine {Grapenuts would probably work too}. I LOVE "Just Bunches!" by Honey Bunches of Oats. I like to add honey too... it adds rich sweetness and is just tasty, I can drizzle honey on anything, LOL!}
{Begin layering in a pretty glass or bowl. I start with the yogurt.}
{Then add the fruit.}
{Be sure to put the granola on top of the fruit and NOT the yogurt, to maintain the crunch. :)}
{And repeat.}
{Right before the last layer, I drizzle the honey. YUMMM!}
{ENJOY. and repeat if needed. LOL! I could eat 3 of these, so good! These are great for breakfast too. {obviously!}}
