Easy Chicken and Dumplings

I have always been a huge fan of a nice steamy bowl of chicken and dumplings.  But I was also extremely intimidated, not wanting to make them at home; thinking the process of preparing them would be so difficult. 

After reading a few dozen recipes online, I came up with my very own easy recipe and I must say: it is AMAZING.  No really. If you love comfort food, you must try this.

Ingredients:

Chicken Soup
1 rotisserie chicken, pulled from bones and chopped
1 cup diced carrots
1 cup diced celery
1 whole medium onion, diced 
2 cups frozen peas
1/2 stick butter
1/2 cup heavy cream
6 cups chicken broth
1 teaspoon salt and as needed
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon pepper
2 tablespoons freeze dried poultry herb mix {onions, thyme, sage, marjoram, green onions, garlic, rosemary}
1 teaspoon dried thyme
1 bay leaf
2 tablespoons flour and 1 tablespoon water to make a slurry to thicken it

Dumplings:
2 cups Bisquick mix
1 tablespoon dried parsley
2 tablespoons chopped chives
1/3 cup heavy cream
1/3 cup milk


{Your line-up of ingredients}

{Start with your veggies.}

{Begin your chopping - start by slicing your celery stalks in thirds, the long way.}

{Next, line up the celery sticks and begin to finely dice.}

{Do the same with your carrots. Start by creating sticks.}

{Then line up and dice.  Carrot confetti. :)}

{Finally, dice your onion.}

{Bright and fresh veggies, all diced and ready to go.}

{Now it's time to saute them.  Get a nice big, heavy bottomed pot and melt the butter, over medium heat.}

{Dump in your veggies and season with salt and pepper.}

{As your veggies are sauteing, start to pull away your chicken from the bone.}

{Once you have the meat pulled, roughly chop and set aside.}

{Stir your veggies and continue to saute for about 2 more minutes or until nice and tender {but not mushy}}

{Add your herbs, onion powder, garlic powder and bay leaf.}

{Let cook together for a moment more, to meld the flavors. YUM!}

{Add in your pulled chicken.  You can also add in a few of the bones for flavor.}

{Pour in the chicken broth.}

{At this point, it's important to taste for seasoning.  Add in salt and pepper as needed.  You want this to be nice and flavorful. Let your chicken soup simmer away for about 20 minutes.}

{Now it's time to work on the dumplings.  Here are your key ingredients.}

{This is a dump dumpling mix. LOL! Could not be easier.  Just dump in your Bisquick mix, milk, cream, dried parsley, chives and mix.}

{You want the dumpling mixture to resemble a really wet biscuit dough.  If it's too wet, sprinkle in a bit more Bisquick mix to get the right consistency. Once it's mixed set aside.}

{Now, you need to thicken your soup some.  Add enough water to about 2 tablespoons of flour to create a runny paste.  Or a slurry.}

{Add the slurry to your simmering soup.}

{Let this continue to simmer {and thicken} for a few more minutes.}

{Add in your frozen peas. As much as you'd like, really.}

{Then your heavy cream.  The broth will become rich and creamy. Yes!}

{Let the now thickening, rich and creamy soup simmer a bit more before adding your dumplings. Check it again for seasoning.  Add in salt and pepper if needed.  Remember - flavor is important. :)}

{Next, start dropping spoonfuls of your dumpling mix into the simmering soup.  Just add them in, wherever there's room.}

{Once you've dropped your dumplings, cover the pot and let them simmer and cook for about 15-20 minutes.}

{And there you have it! Your big pot of easy and delicious chicken and dumplings.}


{Spoon into a pretty bowl, garnish with parsley and ENJOY!}

  6. Ironically, I was just talking to my family on Sunday about making this same dish. I've never made it before & they've NEVER had chicken n dumplings. They swear they dont like it either???

  8. As a child I would love my Grandmother's chicken and dumplings. I too thought it was really difficult to make. Until she sat me down and showed me how it's done. Since then, I probably make them for my household twice a year in the Winter, but it's such a good down home meal. It makes me feel like I'm back watching Grandma as I eat my own. Loves!
