Magical Angel Chicken Pasta

August 7, 2011

This pasta dish has changed our lives, lol.  We seriously can't get enough; it is requested for dinner at least once a week.  Since it is a bit too decadent to enjoy on a weekly basis, I decided to make it on Saturday night.  The flavors in this are simply amazing, you must try it!

The recipe below is adapted from here.  I made a few changes. :)

Ingredients:
1 whole rotisserie chicken, the meat pulled from the bone
1 stick of butter
1/2 of medium sized onion, diced
1 packet of dry Italian salad dressing mix
1/2 cup dry white wine {I didn't have any on hand so I used champagne.  Yeah, I'm fancy like that. :)}
1 can condensed golden mushroom soup
4 ounces of cream cheese with onion and chive
1/2 cup heavy cream
1/2 cup chicken broth
1 pound angel hair pasta

 {Break away the meat from the bones of your rotisserie.  I always have to swat Cory's hands away from nibbling as I cook this, lol.}

 {The star ingredients.}

{Dice 1/2 medium onion fairly small.}

 {Melt the butter in a large heavy skillet.  I use my perfectly seasoned cast iron skillet}

 {Saute onions in thr butter until they are translucent and almost golden brown.}

 {When the onions are brown, sprinkle in Italian dressing mix packet and stir to combine.}

 {Add the can of golden mushroom soup and the champagne... errrr. white wine.}

 {Mix well with a whisk while adding the chicken broth.  Let it bubble a bit and get combined.}

 {Add in the onion and chive cream cheese.}

 {Whisk until combined.}

{Let it simmer for a minute or two.}

 {Add the heavy cream. This makes it super rich and yummy!}

 {Season with pepper to taste.  No salt needed!}

 {Fold in the pulled rotisserie chicken.}

 {Let this bubble away on a very low flame while you boil the pasta and pour the wine.  Or margarita, in my case.}

 {I am always so surprised at how quickly angel hair pasta cooks.  4 minutes. TOPS.}

 {Icy golden margaritas.  The Grand Marnier makes this so delicious.  The bottle was almost gone, so I had to finish it. ;)}

 {His.  Served sprinkled with a little parsley and with a nice chunky piece of bread, of course. }

{And Hers.}

As I mentioned before, this is such a rich and decadent pasta dish...which is why I don't make it often. But when I do, all you hear are OOOOs and AHHHHHHs. It's that good. This is also great for entertaining.  Your guests will be begging for the recipe.

ENJOY! :)
