Thankfully, Cory and I rotate our cooking days at home, so I don't have to always decide what's for dinner. When it is my turn to cook, I am definitely looking for ways to spice up our usual line-up of easy meals; to include those that can be quickly made while helping with homework assignments. This Asian inspired Beef and Brocoli Noodle Bowl recipe is not only easy, but satisfying and delicious!
Ingredients:
1 1/2 pound flank steak cut into thin strips
1 Cup of your favorite store-bought Teriyaki Sauce
2 Tablespoons of Olive Oil
1 Tablespoon of Crushed Garlic {or 2 cloves, crushed}
1 Can of Bean Sprouts
2 Tablespoons of Soy Sauce
1/4 Cup Water
1 Bag of Frozen Broccoli
1/2 Medium Onion chopped
1/2 Medium Green Pepper, chopped
1/2 Medium Red Bell Pepper, chopped
1 Pound Angel Hair Pasta, cooked just under al dente
{First, assemble your ingredients.}
{Chop your veggies. The possibilities are endless here. You could add mushrooms, carrots, zucchini, squash, whatever you have on hand!}
{Heat up a large skillet over medium-high heat and coat with the olive oil.}
{Start sauteing your aromatics: onions and peppers.}
{Saute for about 6 minutes or until they get some good color.}
{Next, add in your sliced flank steak. You could also use the beef at the meat counter that is already cut into strips. Sprinkle on your garlic.}
{Add your broccoli, bean sprouts and other veggies.}
{Be sure not to overcook them, you want to keep some of the crunch!}
{Pour in your teriyaki sauce, water and soy sauce.}
{Let simmer for a few minutes to warm through.}
{Serve with angel hair pasta and slurp with chopsticks if you have them.}
This would also be really good with white or brown rice. Be careful not to add any salt as you get plenty from the terryaki and soy sauce.
