Not only was I a whiny, tired and headachey mess when we snapped these pictures tonight after work, it was BITTER cold out and I could not move, LOL! I was determined to capture this outfit though and am enjoying sticking to my goal for 2012 - to update regularly. :)

I admit that this dress could either be seen as absolutely hideous ... or absolute adorable. I of course think it's the latter. My love of stripes will likely never fade; I feel so quirky whenever I have them on.

I made a promise to myself that I would turn in at a reasonable hour tonight, so I have to finish my hair and to bed I go. AND tomorrow is Friday. YAY!

Creamy Rotisserie Chicken Salad

I am drooling as I upload these pictures and type this. This was BEYOND AMAZING. And easy. I yapped on the phone with my mom the entire time while whipping this up and snapping pictures. :)

{Pull the meat off of your rotisserie chicken and chop up into small pieces.}

{Finely dice 1/4 cup of each: red pepper, green onion and celery. Red or white onion would also work. You want reaaaalllly small pieces for this.}

{Next, gather your ingredients for the creamy dressing.}

{Start with the mayonnaise; using maybe 1/2 or 3/4 cup at first. Remember, you can always add more if needed. The last thing you want is slimy chicken salad with too much mayo.}

{To the mayonnaise, add a 1/2 teaspoon of white wine vinegar and 1 teaspoon of sugar, a pinch of salt and a few cracks of black pepper.}

{Add your chopped veggies and dressing to the bowl of chopped chicken.}

{Mix well until perfectly combined. Add more mayo, if needed. YUM!}

{I made sandwiches for Cory and the kiddies, using toasted multi-grain bread.}

{Over a really thin layer of mayo on the toast, I added fresh spinach leaves, sliced tomatoes and a teeeeny sprinkle of salt and pepper.}

{I piled on the creamy chicken salad.}

{And added a sliced hard boiled egg to each one.}

{Sliced it in half and was DONE. AMAZING.}

{I opted for crackers to scoop up and enjoy my chicken salad.}

{So so so good. If chicken salad is your thing, you will LOVE this. ENJOY!}

...and the leftovers at work were even better.

This little dress is easily one of my best purchases, ever. I have worn it so so much and I love it more each and every time. See it worn here, here, and here. I have officially deemed it my version of the 'little black dress'. You know, the one that you look great in, can be styled many different ways and can be worn for any and every occasion?

I think it's important to have a dress that you can throw on when you are not feeling your best and instantly feel fab. Or in my case {this morning}, can reluctantly crawl out of bed when you are dead tired and grab it because you KNOW it will never fail you. What could be more perfect? :)

I felt like a million bucks in this outfit on Thursday. I had a meeting first thing in the morning and I felt like I could conquer the world rocking this blazer and these pumps. The old saying "when you look good, you feel good" is never NOT true. Note to self: in 2012, wear more blazers to work.

Ok, enough about work - happy Friday! Well almost Saturday now. :) I am enjoying a quiet evening on the couch with a glass of wine and reruns of King of Queens on the DVR. I hope you have a fantastic weekend. It's going to be a cold one and I plan to do much of what I am doing right now. Nothing. LOL!

Seafood Bake

My family loves seafood, shrimp especially. We keep a bag of uncooked frozen shrimp in the freezer at all times. I love to steam them and sprinkle on a bit of Old Bay seasoning to enjoy on a Friday night with wine. YUM!

I had taken some out to thaw on Tuesday, along with a few pieces of Rainbow Trout. I put together this simple and flavorful recipe with a few things I had on hand; it was quick, easy and delicious! If you LOVE seafood, you will adore this.

Ingredients:

Uncooked Shrimp and Fish, cut into bite sized pieces {any kind of fish would work for this!}

1/4 Cup Chopped Onion

1/4 Cup Chopped Red Pepper

1/2 Stick of Butter

1 1/2 Cup Panko Breadcrumbs

1 Can of Golden Mushroom Soup

2 Tablespoon of Milk

1 Teaspoon of Seasoned Salt

1 Teaspoon of Garlic Powder

1 Teaspoon of Onion Powder

1 Tablespoon of Dried Parsley

1 Teaspoon of Italian Herb Mix

{While you gather your ingredients, preheat the oven to 400 degrees.}

{Finely dice the onion and pepper until you have about a quarter cup of each.}

{Over medium high heat, start sauteing the onion and pepper in the butter. I am seeing a pattern in my recipes: they all start with onion and red pepper, LOL! The combination of the two creates a perfect seasoning base. And I find that even if you don't like peppers, red ones are really mild and just meld with onion so well!}

{Rinse your seafood in COLD water and pat dry. Cut into bite sized pieces. These shrimp were a pretty nice size so I cut them in half.}

{Put your fish and shrimp into a medium sized casserole dish.}

{By this time, your onion and pepper will be almost caramelized.}

{Add the breadcrumbs to the onions, pepper and butter.}

{Sprinkle in your seasonings and herbs. Mix well to combine. Reduce the heat and let this brown for about 5 minutes, stirring occasionally.}

{Add your can of soup to a saucepan and mix in half a can of water. }

{Mix well to combine and season well with salt and freshly cracked pepper.}

{Remove from the heat and add in the milk. Mix well. Let this cool in the fridge for 5-10 minutes.}

{Once the soup mixture is cool, pour it in the casserole dish over the seafood.}

{The breadcrumbs should be nice and golden brown. Be careful to keep them on a low burner, you don't want these to burn.}

{Sprinkle and cover the top of the seafood with the seasoned and buttery breadcrumb mixture.}

{Let this bake at 400 degrees for about 20 minutes or until it's bubbly hot and the shrimp/fish is cooked through.}

{Serve with your favorite sides; I served mine with creamy mashed potatoes and green beans. :)}

Misikko Review + Hair Ramblings

When I was contacted by Misikko to review one of their styling products, I browsed the site and was immediately intrigued by the top10 best flat irons list. I was also wanting to do another hair post soon anyway, so this review was the perfect opportunity to ramble about my hair. :)

Now being honest, I am not a huge fan of flat irons as I do not like BONE straight hair. I like a bit of texture to my hair, especially when wearing weave – I think it looks so much more natural.

My normal routine is to let my hair air dry {mostly} after washing it then finish with a warm blow dryer. I then use a Hot Tools 1.5 inch curling iron to straighten and wave/curl my hair. I figured I could use the flat irons to straighten and smooth the hair – then use the curling iron to style it. Well, I have been using the Hana Titanium 1.5 flat irons since getting them a week and a half ago – to straighten and style, and I love them!

The shipping on these was really fast, which a definite plus, in my book. In the box with the flat irons was also: a brush, a rubber mat to lay the irons on while they are heating to protect your surface, a cute case to store them in, a towel-hood to wrap and dry your hair after washing, a small bottle of "shine shield", which is a leave in treatment {that I did not use}, an ELF lip gloss {which is pretty good} and an ELF shimmering cream {did not use}.

A few points about my hair:

♥ The weave that I have in is raw Brazilian virgin wavy hair, in 16 inches. I dyed it jet black on Saturday night {and I love it!}

♥ I use DOVE Intensive Repair shampoo and conditioner {I wash it with shampoo every other week and co-wash – using conditioner ONLY – every week.} This is the most amazing shampoo and conditioner, I HIGHLY recommend it.

♥ I did not put any other products in my hair. And I hardly ever do; I like to keep my hair clean and product-free. I am so obsessed with fresh fluffiness. No oils or serum. If I am curling it, I will lightly spritz it to hold the curls a little better. If I use the foam rollers at night to sleep in, I don’t use anything at all.

♥ To preserve the body and shine, I wrap my hair at night in a beehive and tie it tight, using a CLEAN scarf.

Here are my final thoughts on the Hana Titanium Ionic Flat Irons:

♥ The packaging of this product was absolutely adorable! I am a pretty-packaging lunatic. I love when something arrives and is perfectly put together. It makes a huge difference in the experience, in my opinion.

♥ I have always heard that the Chi hair straighteners get hot but these flat irons get really really HOT, really really fast. They go up to 450, but I only had them set to 400. The heat-up speed is really important to me, I loved plugging them in and being able to begin to style my hair almost instantly. Using these gave my hair a beautiful shine and great body - that I don’t think I would have gotten with the curling iron.

♥ Flattening and smoothing my hair was insanely effortless. I have been excited to plug in and use these every morning {I do need to get a little better at bending at the right angle though when I want to wave/curl my hair with them.}

Overall, they are really good flat irons and I think whoever gets them would be completely satisfied. If I had to have a con, it would probably be the price. At $175, they are expensive and may be out of a reasonable price range. BUT, I do believe in splurging every once in a while on something that I know I will have forever, so these would be worth it if I were considering buying some. And the free shipping and $10 off "winter10 code" would lessen the blow a little.

I am sort of in shock right now that I can wear pumps without socks on January 10th and not have my feet freeze to death. LOL! And I wasn't too too cold when I took my jacket off for a few minutes for this photoshoot. Craziness, I tell you.

Anyway - I hope you had a great weekend! :) Mine was wonderful - Joe was absolutely AMAZING on Sunday. He gives such a great performance; his voice is so perfect!

It was freeeeeeeezing and windy in New York; I couldn't even stand to take more than a couple pictures. ...especially since I only wore a BLAZER {without a coat}, a thin scarf... and a {maxi} dress! Thank goodness I put tights on under it and that we didn't have to do too much walking outside.

I wore the cutest striped chiffon maxi skirt {that I will be rocking again this week to work} and boots. The mustard scarf was a gift from my friend C, who visited Ethiopia and was sweet enough to bring me something back. :) And the teal Oleg Cassini blazer is probably my fave. :)

A Queen's Ramblings

Although the larger sizes were sold out when I saw this t-shirt in ASOS's clearance sale, that didn't stop me from buying the largest available size - an 8.

So glad I took a chance, I love the fit of this perfectly adorable and appropriate t-shirt. Number sizes don't scare me. AT ALL.

I straightened my hair using the most amazing flat irons that I will be reviewing soon. I actually filmed a video. Not sure if it will go live though - the lighting wasn't the best. I will edit and see how it turns out.

These pictures made me realize that my hair was a little too light for my liking. Which is why I dyed it JET black last night. :)

Cory and I are heading up to NYC this afternoon to see Joe in an intimate concert tonight. The show starts at 8 - I am so excited! Can't wait to take outfit pics in Times Square.

The plan is to also find some amazing sushi.

I rocked this yesterday to a group dinner at Benihana for my sister's 24th birthday. And this blazer was the only jacket I needed. It felt like SPRING. In January - so insane!

Happy Sunday Funday! I'm off to get pretty for New York City.

Pink Stems

I absolutely LOVED this outfit! I felt like such a lady in this vintage dress {that I scored at the thrift store for $3!!!}. It was also fun to match my lip color {Revlon's "Fuchsia"} to my nails {OPI's "Dim Sum Plum"}, which tied in the pink tights. I've said it so many times before - I am so much happier when I have on bright and pretty colors. Especially when it's cold out. My rule for wearing bright colors - the more vibrant the better!

Happy FRIDAY! I am spending a quiet evening at home tonight washing my hair and drinking wine. Don't know how good of a combo that is, now that I think about it, LOL!

Deviled Eggs

I don't think I know anyone who doesn't enjoy a good deviled egg. My family just happen to LOVE them. Not only are they great to have at any and every event, I find them to be the perfect snack or side dish for dinner - we have them quite often. I've even taken a few to work for breakfast on occasion. They keep well in the fridge {in an air-tight container, on a layer of paper towels for the moisture} and can be whipped up in 10-15 minutes {after boiling and peeling the eggs.}

Isis is now old enough to boil, rinse and peel the eggs whenever she wants me to make them. I will be teaching her how to execute this recipe soon. :)

Ingredients:

1 dozen eggs, hard boiled, peeled, cooled and toweled dry

1/4 cup Mayonnaise {plus a Tablespoon or two to get the correct consistency}

1 Teaspoon of Yellow Mustard

1 Heaping Tablespoon of Sweet Relish

1/2 Teaspoon of Seasoned Salt

1 Pinch of Sea Salt

About 10 Grinds of Black Pepper

1 Teaspoon of Sugar

1/2 Teaspoon Celery Seeds

Paprika for sprinkling

{Gather your ingredients. I love how simple this line up is.}

{Once your eggs are hard boiled, peel them, rinse with icy COLD water and dry them with a paper towel.}

{Slice your eggs in half and remove the yolks. Put them in a mixing bowl.}

{Line your hallowed eggs on a tray.}

{Begin mashing your yolks. I like to use a potato masher - makes it SO EASY!}

{Be sure to mash the yolks really well. You want your mixed filling to be nice and smooth.}

{Add all of your ingredients to the smashed yolks, except for the paprika. Remember to start with 1/4 cup of mayonnaise and increase the amount from there, if needed.}

{Using a whisk, whip and mix the yolk filling until it is reallllllly smooth. Here is where you need to see if the mixture needs more mayonnaise. Do not add too much, runny deviled eggs are not appealing. At all.}

{Next, you will need a quart sized Ziploc plastic bag {or larger} to pipe the filling into the hallowed eggs.}

{Using a rubber spatula, scrape the filling from the mixing bowl and fill the plastic bag.}

{Be sure and scrape the sides to get your filling. You want to make your deviled eggs nice and full.}

{Let the air out of the bag and seal it.}

{Snip a small section of the corner off of the bag. Not too small though.}

{Begin piping the filling into the eggs.}

{Make them full - you want them to be pretty and plump. :)}

{Once they are filled, lightly sprinkle with paprika.}

{They can be eaten right away! ENJOY!}

You could also mix crab meat into the filling for a fancier deviled egg. I've been known to make them with a bit of chopped chives for a mild onion bite - YUM! The possibilities are endless. :)

First of all - BIG GIGANTIC hugs to all of you who read, commented, emailed, facebooked and tweeted me about my last post. It feels so good to know that I have you here with me. I was getting choked up at work reading your responses. Thank you! :)

Now. For the sake of not sounding like a baby and because I have been complaining to everyone who will listen today, I won't go on too much about the single digit temps outside here on the blog but man.... - it is SO COLD!!! LOL! It's shockingly freezing out and needless to say, I can't wait until the spring.

Although this isn't a typical 'winter hat', ie., knitted or covers my ears, it is wool and it did help with some coverage from the wind. I also wore a scarf and gloves which are not pictured - we snapped these pics in a hurry after I came in from work. My legs were a little chilly but I was determined to wear a skirt or dress with this tunic. You can't see the back but it's lower than the front. It's really cute and will look cute with black skinny jeans and flats on the weekend.

Although I am typically not a hat person, I was totally inspired by one of my favorite bloggers, Sing of Sing'ature Style to finally rock this hat that I thritfed a few months ago. She has a mean hat collection and pulls them off perfectly. I tip my hat off to you, Sing!

Why I Blog {Hello 2012}!

Happy New Year! I hope you had a wonderful time celebrating.

As excited as I am to start 2012, I can’t help but reflect on how wonderful 2011 has been for BeautyFash, the blog. When I began blogging in April of 2010, I had absolutely no idea how much I would enjoying sharing my life and style through this blog. I knew it would be fun for me to see my personal evolution and to have a diary of the happenings in my life, but I didn’t know it would affect so many lives.

I think what surprised me the most is how relatable I am to so many people. To all of the mothers out there who are taking care of home and still fly. Or the women who are looking for more easy and tasty recipes to make at home. Or the women who love to thrift and can get inspiration from seeing what I scored at the thrift store. Or the girl who isn’t a makeup guru and just wants to add a little pizazz to her makeup routine, via drug store purchases. Or the girl who doesn’t put much thought into her outfits and just wants to get an idea of how to put things together in a way that she didn’t think of. Or the mommy on a budget who just wants to see someone rock thrifted pieces mixed in with normal items and not out-of-reach designer labels and shoes that are totally out of her shopping budget. And let’s not forget the women who are not a size 4 or 6… or even 10 or 12. Real sized women with real bodies and curves who just want to see someone with a body like theirs wearing cute clothes.

I love being the blogger that can inspire and be relevant to those women. And this is why I blog.

I am just a mommy and wife who wants the best for her family and who likes to have fun doing it. I don’t cook everyday but when I do, I like to make flavorful and easy dishes that are also fun. I cannot beat my face like some of the YouTube gurus; I have a simple beauty routine using simple products that can be found at your local CVS or even the beauty supply store. I don’t have an outrageous shopping budget, I almost always shop the clearance rack and every single blazer that you see me rock was thrifted.

Last month, I was hit with a troll commenter telling me how fat I was and how I should lose weight. Although the comments did not bother me in any way, other than being curious as to what low life would take the time to even think I would care about what they had to say about MY body, after tracing the IP address and finding out - it made me sad. Sad to know how empty their life is. It’s a shame {for them} that they wasted time commenting to the wrong person – my esteem is too high to even be touched. :)

Plain and simple, I have curves. And my journaled outfits are my ‘Curvy Chronicles’. I will never be skinny and I am more than happy with that. I love food and cooking and will continue to share the good food that I make. I have bumpy love handles and a pudgy belly. And I will continue wearing form-fitting tops that graze them. I wear a size 14. And sometimes 16. And I will continue to try on the 14 first, or the 12 even, if it looks like it will fit. :) I have hips. And thunder thighs. But I will continue to wear leggings and jeggings. I have fat and I have jiggle that I just totally and utterly ADORE. And my too-good-to-be-true husband does even more than I do. :)

My blog resolution is to post more. More cute outfits, more good recipes, more beauty ramblings and more about what makes me Lexy. Thanks for being here with me; I hope you'll stick around.

{Flashback!} Friday

I couldn't think of a better flashback photo to post about for the last {Flashback!} Friday of 2011.

I feel so abundantly blessed to have a wonderful husband and 2 happy and healthy children to share my life with. We have so much fun together – hectic school mornings getting out the door… mornings spent lazing around watching tv / reading / coloring… busy weekend afternoons running errands together… family vacations and getting to create fantastic memories…evenings at home playing games or telling stories… time spent with family and friends.

I have such a sense of completeness with my Cory, Cory and Isis by my side that it almost brings me to tears. Here’s to another great family year, I can’t wait to see what 2012 will bring.

Winter Classic

I am such a huge fan of the denim on denim look. Especially a darker bottom and lighter top. There was something classic and perfectly pulled together about this outfit; especially for a Saturday. I am usually super casual when running errands with Cory and the kiddies but I decided to jazz it up a bit, this past weekend. :) Thankfully we didn't do much walking outdoors, my feet were freeeeezing in these flats, lol. I fail to realize that being sock-less in December isn't really a good idea.

...hot beverages in hand, we worked our way through the holiday shopping crowds. Isis was so happy I let her get a kid's sized hot cocoa from Starbucks... they even wrote her name on the cup.

She gets a kick out of the smallest things; I absolutely love it.

{Flashback!} Friday

{Cory Jr., 4 years old}

Cory {or Cor Cor, as I like to call him} has always been what the true definition of "boy" is from as far back as I can remember. From the minute he could walk, he was running around getting his little hands into everything in sight.

I remember when he was just shy of 2 years old - he rode his motor-powered car down a flight of outside stairs. Yes, concrete. It scared me half to death, before realizing that he wasn't seriously injured. With a busted lip, scratched up nose and forehead {and after getting him all cleaned and bandaged up} he was right back in that car with a smile on his face.

{Cory Jr., 12 years old}

I was young when I had him {20 years old} and I had no idea then how much he would change our lives. ♥ He is growing into quite the young man, right before our very eyes. It amazes me DAILY how tall he is; we are almost the same height! He does well in school and is becoming more responsible each day. He is the best big brother to Isis - it makes me choke up when I see how he takes care of her. Words to describe my Cory: funny {makes everyone laugh}, charming, smart, witty, hungry {at all times! lol}, energetic, athletic {obsessed with football}, calm and positive {never ever complains!}. He is still quite the dare devil and we promised him a real dirt bike when he graduates and goes into middle school this year. Oh, my nerves!
I am so, so, so, so proud of him. He reminds me so much of his father, I can't wait to see the great man that he will become.

So, it looks like this will be my new location for outfit pictures during the week. Although it was pitch black when we went out to take these pictures after work, they came out ok. :)

This was a really fun outfit to wear to work. I felt so girly wearing pink and ruffles.

I love layering in the cooler months and this little dress is just the perfect base. And since it only has one shoulder and is a PARTY dress, a long sleeved t-shirt underneath was in order. These pumps are so very comfy, but they are bit too big and are not the easiest to walk in since they flop off my feet. I have to get some insoles for a tighter fit.

I am so happy that the weekend is almost here. I am looking forward to relaxing and enjoying the extra day off. I'll be back tomorrow with a {Flashback!} Friday post. I love Fridays. ;)

Sweet and Spicy Asian Glazed Shrimp

My family is always in the mood for Chinese and I just love making it at home. With a few ingredients that I already had on hand, I was able to create this amazing 10 minute shrimp dish. It could not be more quick and EASY, the rice took longer to cook!

Ingredients:

1 Pound Large Shrimp, peeled and de-veined

1/4 Cup chopped Green Onion

2 Tablespoons Minced Garlic {or 2 whole cloves, chopped}

1 Teaspoon Minced Ginger

2 Tablespoons Honey

1/2 Cup Ketchup

2 Tablespoons Cornstarch

2 Tablespoons Soy Sauce

1 Teaspoon Crushed Red Pepper Flakes {less or more depending on your taste}

1/2 Teaspoon Onion Powder

2 Tablespoons Vegetable Oil

{Gather round your ingredients. I tried to list the measurements as accurately as possible, but I pretty much just eyeballed everything. :)}

{Dump in and whisk together all of your ingredients instead of the shrimp, green onion, oil and garlic.}

{Over medium high heat and in a nice large pan, heat the oil and add in your minced garlic.}

{Once the garlic starts to sizzle up {but not brown}, add in your chopped green onion and stir. Let them both sizzle together for a minute or two.}

{Add in your shrimp and let them cook for about 3 minutes, stirring constantly.}

{Pour your sauce over the shrimp, green onions and garlic. YUM!}

{Reduce the heat and let this all simmer for about 4 minutes. Not much longer, as the shrimp will get rubbery when overcooked. Your sauce will thicken nicely from the cornstarch.}

{Serve with steamy rice and enjoy! I like to use Jasmine rice. It's sticky and delicious, especially with Asian dishes!}

I plan on making this again with scallop and shrimp. Can't wait!

If you look closely at these pics, you can see the snow flurries that began to fall as we were shooting these. So unexpected and definitely unwelcome. Gosh, I hate the winter.

I am looooving my new hair. I installed it on Wednesday night, trying a new technique {partial weave instead of full} and it seriously took me 5 hours to take out, wash, deeeep condition, blow dry, braid and sew it in. My arms are still sore. I think it was worth it though. :)

Easy Pomegranate & Orange Margaritas!

Although I adore a nice glass of white wine {preferably White Merlot}, lately, I have been craving margaritas. Which has actually been pretty easy to do since creating these deliciously fruity margaritas this summer. I suppose you could also mix tequila with lime and Grand Marnier to make them from scratch, but when this perfectly mixed and measured bottle of Jose Cuervo Golden Margarita exists, why even bother? :)

Let's get started!

Ingredients:

Jose Cuervo Golden Margarita {this is already mixed and has tequila in it. It also has Grand Marnier {an orange liquor} and lime.}

1 Navel Orange

1 Lime

Grenadine Syrup

100% Pomegranate Juice

Ice

Sugar or Salt for {for the rim of your glass}

*Note: I pretty much eyeball and make these to taste. You can't mess them up, add in however much you think is right. :)

{Gather your ingredients. Pour salt or sugar onto a plate to dip your glasses in. I prefer sugar. YUM! You will also need a grater to zest the orange and a knife to slice.}

{Thinly slice your lime. Save the butt end to rub on your glasses before dipping into your sugar {or salt.}}

{Rub the lime juice around your rim. You could use a cute martini glass here but I actually prefer these 4 ounce tumblers. }

{Then dip.}

{Set aside.}

{Begin zesting your orange. Be sure to only grate the orange peel.}

Make a few slices as well...to garnish the glass. Save half of the orange after zesting. You will need the juice.}

{Now it's time to make the margaritas. Pomegranate is up first. Add about 2 Tablespoons of Grenadine to your rimmed glass with ice ...not too much ice! :)}

{Add about 2 Tablespoons of Pomegranate Juice.}

{Top off with Jose Cuervo Margarita.}

{Add a twist of lime. DONE!}

{Orange is next. To your ice, add a sprinkle of orange zest.}

{Add a hefty squeeze of orange juice.}

{Add about 2 Tablespoons of Grenadine.}

{Top the orange off with Jose Cuervo Margarita, as well. Add a twist of orange... and DONE!}

These are seriously so perfect. And the possibilities are endless. I can't wait to try crushed raspberries for a Raspberry Margarita. Or pineapple juice and crushed pineapple for a Pineapple Margarita.

Saturday Mornings

Another pair of boots that I adore. I didn't realize how much I LOVE boot season, LOL!

My Saturday mornings and afternoons are usually really busy and flats are pretty much the way to go. I am either running errands, doing something with the kiddies or shopping; which means: comfort is key and these are so perfect.

Speaking of perfect, I can wear these jeggings every. single. weekend. I have to sometimes stop myself from grabbing them. They are just so great and go with everything - so versatile.

This past Saturday - after dropping Isis off at a friend's for a sleepover, running a few errands and coming home to take a nap, I would have been able to get up, change my top and throw on a blazer - which would have made the perfect date night outfit {along with some heels and few bangles}.

...but date night did not happen. We spent Saturday night on the couch with wine and "Death Becomes Her" {love that movie!}.

You know you are getting old when staying in on Saturday night is actually exciting. I think we'll be doing the same thing this weekend. But with a different movie. :) Looking forward to it!

I am insanely IN LOVE with these boots. They could not be more comfortable and they are just so sexy! They look amazing with leggings, jeans or a skirt / dress with tights. They can be worn pulled up or slouchy. SO FAB!

I rocked this casually fancy outfit on Sunday to grab lunch with Cory {without the kiddies, yay!} and run a few errands. It was really warm and the sun was shining bright; 'twas the perfect afternoon. ...and I could have walked a mile in these boots. As I am getting older, I've come to realize: comfort is key for me when wearing cute shoes. Gone are the days where I am willing to sacrifice a comfortable experience for cuteness. Nope, it's not worth it; I would rather be comfy. :)

Taco Salad

About 2 weeks ago, I had the most amazing taco salad from a deli in the city for lunch and I had been craving it for the rest of the week. I decided to come home and recreate it. ...and I think I like my version better. :) This is so very easy and extremely tasty. Minus the small bowl I was able to pack for lunch the next day, we finished the whole thing! Be sure to sprinkle with fresh chips if you have leftovers to enjoy.

Ingredients:

1 pound Lean Ground Turkey

2 Cups Cheddar Cheese

1 Head of Iceberg Lettuce

1/2 Red Pepper, Chopped

1/2 Onion, Chopped

1/2 Cup Salsa

1 Ripe Tomato, Chopped

1/2 Can Black Beans, Drained

1/2 Cup Catalina Salad Dressing

1/2 Cup Ranch Salad Dressing

1 Packet of Taco Seasoning

1 Cup Crushed Tortilla Chips, extra for garnish

Optional: Sour Cream and Avocado

{Gather your delicious ingredients. I used both HOT salsa and HOT taco seasoning. Gave this a nice kick.}

{Chop your onion and pepper. I love using red peppers, they give such a sweetness, especially when sauteed.}

{Saute your ground turkey with the chopped pepper and onion.}

{When the turkey, onion and pepper start to brown, sprinkle in the taco seasoning and continue to cook until brown.}

{Meanwhile, clean and chop your head of lettuce.}

{When the meat is nicely browned, drain it on paper towel to remove the excess oil and juices.}

Begin to dump your ingredients into a large mixing bowl. First your lettuce. Then the cheese.

{Add in the chopped tomato.}

{And your black beans.}

{Then your seasoned ground turkey.}

{Scoop in the salsa.}

{Roughly mix to combine.}

{Next in goes your dressing. Add in the sweet and tangy Catalina.}

{Then the cool and creamy Ranch.}

{Mix thoroughly to get every piece coated with dressing.}

{Crunch the tortilla chips. I like to use Multigrain, it adds a nice texture. You could also use Doritos...YUM!}

{Add the chips to the mixed salad and mix again. Save a few to sprinkle on the top, once plated.}

{Serve with a sprinkle of chips, dollop of sour cream and sliced avocado.}

I love wearing maxi skirts / dresses with boots in the fall and winter. Adding a sweater to the mix is the perfect way to reinvent a summertime staple. I rocked this outfit last weekend {I know, so behind!} and thought it was casual but fun, especially with this adorable sweater. The red lip was so easy to do, I love a bright lip with bangs. Ultra chic. :)

{Flashback!} Friday

I have such great memories of summer days spent with my little cousin, Kerry. He was so funny and sweet; we would send him on little errands for us {to get candy or water ice, on his bike} and he would always complain, but the rule {created by my older sister, older cousin and I} was: since we were older, he had to listen to us. LOL!

I remember watching scary movies on the couch - all of the cousins piled up under blankets... with the surround speakers blasting and the lights out... it felt like we were in a theater.

I remember him being so happy about getting a new dog {that we were scared of!} and taking care of it as if it were a baby.

I remember literally watching him grow up and become a handsome teenager, being so very PROUD that he was my cousin.

I am forever thankful that I was able to spend summers over my uncle's with Kerry {and my other cousins}... those were the best years of my life. The good ole' days.

Although we got older, our lives changed and we didn't see each other as often, my little cousin had a special place in my heart. My first cousin. The baby boy. Just 28 years old. I will miss him.

My memories are forever mine. Rest in peace. ♥

Fancy Banana Pudding

Before coming up with and making this Fancy Banana Pudding for Thanksgiving, I was not a huge fan of the dessert at all. This method of making it is absolutely amazing and has made me a huge banana pudding fan. The contrast of textures is what makes it unique; there is some crunch involved, which is good to have when eating a usually soft and creamy dish.

Ingredients:

2 Boxes Instant Vanilla Pudding

1 Box Graham Cracker Crumbs

1 Box Nilla Wafers Cookies

1/4 Cup Confectioner's Sugar

2 Tablespoons Sugar

2 Tubs of Whipped Topping, thawed

4 Cups Cold Milk

1 Stick of Butter

4-5 Ripe Bananas Thinly Sliced

{Here's what you will need!}

{You will also need a spring form pan for this dish {the ones normally used for cheesecakes/tarts.}

Preheat your oven to 350 degrees.

{Melt the butter!}

{In a bowl, add the 2 Tablespoons of sugar to the breadcrumbs.}

{Pour in the melted butter.}

{Mix well to combine.}

{Spread the buttered graham cracker crumbs in the pan. Be sure to push up on the sides. Don't worry if the sides are not perfectly even, this will give it character. :) Bake the crumbs in the oven at 350 degrees for 8 minutes or until golden brown.}

{In another mixing bowl, add your pudding mix and confectioner's sugar.}

{Pour in the cold milk.}

{Blend on high for about 2 minutes. The pudding will be soft set.}

{Add in the whipped topping and mix a minute more to combine.}

{Add in the other bucket of topping and mix well.}

{The pudding/topping mixture will be nice and thick.}

{Meanwhile, the crumbs should be golden brown. Remove from the oven and put in the freezer while you slice the bananas.}

{The key to a really good banana pudding in my book, is reeaaaaaaallly thin banana slices.}

{Grab the crumbs and pan and start to assemble. First, add a layer of pudding mix.}

{Then an even layer of banana slices.}

{Then the Nilla Wafers.}

{Repeat 2 more times for a total of 3 layers. Start with pudding and end with pudding. :)}

{Layer 2...}

{...}

{Layer 3...}

{...}

{The assembled masterpiece! Let this chill in the fridge for AT LEAST 24 hours. I know, that is a long time - but you want the Nilla Wafers to absorb the pudding and get soft and yummy. Plus, the flavors will really have a chance to meld together.}

{After 24 hours, loosen the spring on the pan and remove the sides. Lift out the pudding and admire this beautiful and insanely delicious dessert. This is a show-stopper and is perfect for entertaining.}

{The crumbs are crunchy and the pudding/bananas/cookies are soft and creamy. The perfect mix of textures!}

{It almost looks like a cake... but it's not.}

Mine was great; nice and relaxing. I really enjoyed the long weekend, can't believe it's over already.

I did some shifting in my closet with my pants and found these tucked away in the back, so I decided to pull them out. They make a statement for sure and I had fun wearing them {even if I got a few up-down looks, LOL}. I tried to keep it simple and toned down with flats.

The weather has been so pleasantly warm, no jacket has been required since Thanksgiving! Such a nice surprise and I am enjoying every minute of it. ...even though it hasn't been cold enough to wear my new fab faux fur cropped jacket. Can't wait to pull it out!

Chocolate Dipped Pretzel Rods

Chocolate dipped pretzels, does a better combination exist? Salty + sweet is the way to snack in my book. These little favors are such a cute and easy idea for baby or bridal showers, birthday parties - any festive occasion, really. And I think edible favors are the only way to go. :)

These could also be made for the holidays as a little takeaway for your guests.

{I start with a huge heat-proof bowl that can sit atop a pot of simmering water to melt the Candy Melts. They can be found at the craft store and come in many different colors. I used white for these.}

{Over the simmering water, let them melt down in the bowl until they are smooth.}

{These favors call for 2 pretzel rods per person.}

{Be sure to have fun and colorful sprinkles to add.}

{Mini chocolate chips are fun to use too. They are so adorable, LOL!}

{Continue to stir the Candy Melts until they are completely melted and smooth.}

{I also melted some milk chocolate.}

{Using the same "double boiler" method. }

{It doesn't take long and be sure to keep the flame on low.}

{Start your dipping into the Candy Melts and shake off the access. You want a nice thin layer.}

{Adorn with sprinkles as you see fit. The colorful, the better! Let them rest on a cool surface to harden. I normally use wax paper, but was out - foil worked just fine.}

{The melted chocolate can be used as well. ...To dip...}

{...or to drizzle over the white candy coated ones {using a fork}.}

{So cute! I was sure to sprinkle in purple on this batch, since that was the theme of the baby shower I was helping to plan.}

{These double chocolate ones were a good idea as well. I just can't get over how cute those tiny chocolate chips are.}

{These were {of course} Isis's favorite. They are awfully cute, I have to say. Perfect for any occasion.}

{I even made a few with pecans on them; since they are Cory's favorite. Any other nut would work well too.}

{The craft store actually has "pretzel bags", that perfectly fit 2 dipped pretzels. I created some labels, tied them with ribbon and was done. SO EASY!}

I have been really busy the past 2 weekends, helping with baby shower planning for a couple of close girlfriends. It is baby girl season in my circle; I love it! I have a fun and delicious shower favor idea that I can't wait to share soon!

...which is why this will be a super quick post today, I have to finish the deviled eggs. :)

This outfit was casual and comfy and so easy to throw together. I love wearing flats when running around on the weekend and these gold ones seem to go with everything - especially since I adore gold accessories. Admittedly though, my feet were FREEZING since I didn't have socks on. LOL! I was willing to suffer though, for cuteness. :)

{Flashback!} Friday

{Toddler Lexy, roughly 2 years old and Tifini, roughly 4 years old}

When I was younger, I would be so mad that my beads didn't make noise when I shook my head, since my hair was not as long as my sister's. LOL!

My sister Tifini and I have always been close. I feel so blessed to have an older sister who lives close enough to have dinner dates with, whenever we want to. Fortunately, we work a block away in the city so we can also have lunch dates if we are both available.

We talk on the phone everyday, sometimes for hours. I tell her everything and she is {more often than not} my voice of reason. Our kids are really close and weekends / birthdays are often spent doing something together as a family.

We also have a younger sister who is so cute and funny and she just happens to be the mother of our adorable 16 month old nephew, Cameron, hehe!

I am the middle girl of 3 and I could not be luckier. :)

I was off work today and after lounging in bed all morning, it felt good to put on something bright to go and get lunch, run an errand and a get a quick manicure before the kiddies came home from school. I need to be on the lookout for more wool blend blazers while thrifting {as if I need another one!} because this cutie kept me warm and cozy as it was FREEEEEZING outside.

Loving my bangs this time around too. Thought I'd do a little snipping before redoing my hair this weekend. BUT, I am loving this so much, I may wait until after Thanksgiving to redo it. :)

Blackened Chicken Alfredo

Another easy and delicious pasta dish that I enjoyed with my family a few Sundays ago. Warning: this is really addicting and rich. Be sure to serve this dish with a nice big salad with a bright and tangy vinaigrette. Such a great balance of flavors. :)

Ingredients:

For Blackening Seasoning:

2 Tablespoons Paprika

2 Tablespoons Smoked Paprika

1 Tablespoon Salt

2 Tablespoons Garlic Powder

2 Tablespoons Onion Powder

2 Tablespoons Dried Oregano

1 Tablespoon Black Pepper

1 Teaspoon Cayenne Pepper

Boneless Skinless Chicken Breasts

3 Tablespoons Butter

1/2 Red Bell Pepper

1/2 Medium Onion

1 Tablespoon Minced Garlic

1/2 Cup Grated Parmesan and Romano Cheese {in the tub from the dairy case}

1/4 Cup Grated Parmesan Cheese {from the pasta aisle}

2 Cups Heavy Cream

1 Pound of Cooked Fettuccine Pasta

1/4 - 1/2 cup Reserved Pasta Water

1/4 Cup Sun dried Tomatoes
1/4 White Wine {I only had cooking wine on hand}

1/2 Cup Sliced Scallions

{What you will need for the blackening seasoning.}

{The other key players.}

First step, preheat the oven to 350 degrees.

{Start with making your blackening season. Dump all of your spices into a bowl. }

{Mix until combined. If you don't use it all, store the rest in an air-tight container for future use.}

{Slice your chicken breasts in half to make thinner cutlets. Sprinkle liberally with the blackening seasoning. **Save about a tablespoon of the seasoning for the cream sauce.}

{Meanwhile, heat your cast iron skillet over high heat and get it SMOKING HOT. Yes, white hot. If you don't have a cast iron skillet, you could use another pan, just make sure it's oven safe.}

{Place your seasoned chicken breasts in the hot skillet. Do not add oil. The seasoning will start to smoke, don't be alarmed {but open a window}}

{Blacken the first side by letting it cook for about 3-4 minutes. Flip over and blacken the other side. Place in the preheated oven and cook until they are done and the internal temp reaches 165 degrees F.}

{As your chicken cooks, start chopping your veggies. First the red pepper; cut into strips.}

{Then slice the onion into the same size pieces as the pepper.}

{Over medium high heat, saute your peppers and onions in the butter. Let them cook until they are soft.

{Season with salt and pepper. Let saute for 3-4 more minutes.}

{Here is where I realized that white wine would be a good addition to this recipe. But I didn't have any on hand... I KNOW!!! Because I made this on a Sunday and the Wine & Spirits shop was closed, I had Cory go out and getting cooking wine. It wasn't as bad as I thought it would be. If you have real wine, use it. In a pinch, cooking wine would also work!}

{The sun dried tomatoes are an optional ingredient. If you can get them and you like the flavor / texture, use them!}

{Chop a few of the tomatoes into small pieces.}

{Your peppers and onions should be good and caramel'y.}

{Remove from heat and add the minced garlic. You don't want it to burn over the heat.}

{Deglaze the pan with the wine.}

{Let this bubble and reduce for about 4 minutes.}

{Next, reduce the heat to medium low. Add in your heavy cream and 1 tablespoon of the blackening seasoning.}

{Mix in your chopped sun dried tomatoes.}

{Stir to combine and let this bubble and thicken for 2-3 minutes.}

{Stir in your cheese.}

{Let this bubble and thicken for another 2-3 minutes.}

{While that's reducing, slice your scallions.}

{Your creamy cheese Alfredo sauce should be nice and thick. Taste for salt. Remember, flavor is important. :)}

{Your chicken should be done by now. Make sure it's cooked through, but don't overcook.}

{Remove from the pan and place on your cutting board.}

{Chop your chicken into nice bite sized pieces.}

{Add your cooked pasta into the cream sauce. Also, add in about 1/4 cup of the pasta water.}

{Add your chopped chicken.}

{Mix well to combine. The blackening seasoning from the chicken will mix in with the cream sauce. YUM! At this point, decide if the sauce is too thick. If so, add in more of the pasta water to thin it a bit.}

{Serve on a pretty plate and top each serving with a sprinkle of scallions.} ENJOY!

Happy Sunday!

Let me just start with: I LOVE THIS COAT! Spotted this beauty while thrifting a few weeks ago with my dear friend Danita and I almost didn't get it. To be honest, I was a bit skeeved by it. It had a "thrift store smell" and the sleeves were kind of dingy. Danita pushed {thank goodness!}, I braved through, tried it on and fell in LOVE. I immediately put it in the cleaners and was thrilled when I got it out. It is so gorgeous.

I love how the shoulders have the slightest puff. The sleeves are elasticized and can be pushed up or worn down. It is SO SOFT and has the perfect A-line shape. AND it was $8.00. Such a winner! :)

Was casually comfy on Friday with these jeggings on, but this coat took my look to the next level. I felt so vintage glam.

It feels good to be dressed down today in sweats and sneakers. Headed to brunch with my sister and then off to visit my parents and nephew. I hope you enjoyed your weekend!

Easy Weeknight Dinner ~ Beef and Broccoli Noodle Bowl

Thankfully, Cory and I rotate our cooking days at home, so I don't have to always decide what's for dinner. When it is my turn to cook, I am definitely looking for ways to spice up our usual line-up of easy meals; to include those that can be quickly made while helping with homework assignments. This Asian inspired Beef and Brocoli Noodle Bowl recipe is not only easy, but satisfying and delicious!

Ingredients:

1 1/2 pound flank steak cut into thin strips

1 Cup of your favorite store-bought Teriyaki Sauce

2 Tablespoons of Olive Oil

1 Tablespoon of Crushed Garlic {or 2 cloves, crushed}

1 Can of Bean Sprouts

2 Tablespoons of Soy Sauce

1/4 Cup Water

1 Bag of Frozen Broccoli

1/2 Medium Onion chopped

1/2 Medium Green Pepper, chopped

1/2 Medium Red Bell Pepper, chopped

1 Pound Angel Hair Pasta, cooked just under al dente

{First, assemble your ingredients.}

{Chop your veggies. The possibilities are endless here. You could add mushrooms, carrots, zucchini, squash, whatever you have on hand!}

{Heat up a large skillet over medium-high heat and coat with the olive oil.}

{Start sauteing your aromatics: onions and peppers.}

{Saute for about 6 minutes or until they get some good color.}

{Next, add in your sliced flank steak. You could also use the beef at the meat counter that is already cut into strips. Sprinkle on your garlic.}

{Let this simmer for a few minutes until the beef is cooked through.}

{Add your broccoli, bean sprouts and other veggies.}

{Be sure not to overcook them, you want to keep some of the crunch!}

{Pour in your teriyaki sauce, water and soy sauce.}

{Let simmer for a few minutes to warm through.}

{Serve with angel hair pasta and slurp with chopsticks if you have them.}

This would also be really good with white or brown rice. Be careful not to add any salt as you get plenty from the terryaki and soy sauce.

When I had this sweet polka dot duster {that is actually a dress} in mind, I planned to wear it with denim skinnies but I {of course} changed my mind at the last minute. These bright corduroys just seemed like the right companion. I love popping unexpected colors into an outfit. :)

Lots of recipes coming later this month and next; I am hosting Thanksgiving dinner at my house, YAY! I am so excited, especially for my caramelized onion cornbread stuffing which is seriously too good for WORDS.

I love this picture of my mom and dad {who just celebrated their 35th wedding anniversary}, back in their dating days. My dad, who was in a band and played the drums, was always so stylish. When looking at this picture, my mom always tells the story of my dad actually being pissed at this event and wanting to leave because another guy there had on the same suit that he did. LOL! My mom was so cute, loving her hair and that midi-length plaid skirt. I am so happy that they met, fell in love and were married. :) They are the perfect example of what I want Cory and I to be to our kiddies.

Is it really November 1st? These weeks are FLYING!

Fun fact about me: ~~I am pretty much blind~~ my eyesight is reallllllllly bad, lol. I normally wear contacts but I waited too long to order new ones and I was down to my last pair so I decided to go and get glasses to have a back-up. Although I have been a little loopy getting used to them since this afternoon, I am in LOVE. And why do I have such an urge to rock a red lip with these frames? LOL!

Cory on the other hand can take or leave them, lol. He said he needs to get used to seeing me with them on. Fair enough.

I am loving bright colors this fall {as you can see from my last few posts}. I am so drawn to color lately, mixing bold hues together, especially. They have been so easy to grab. :)

Of course, the first snowfall of the season this weekend called for the return of my warm and cozy crocheted cowl. It kept me nice and warm when dashing in and out of the car on Sunday while running errands and lunching with Cory. It was FREEZING!

...but I didn't get a chance to since it was so cold {and snowy}. Hopefully, I'll get a chance to get dolled up and put it on this weekend. We are due for a date night anyway. :)

I thought a hot pink lip + the bright and floral shades of this gorgeous scarf was so fun for a Friday! Absolutely loving the puff of the shoulders in this blazer.

Also, note to self: buy more mustard yellow! I love this color for fall. :)
