BBQ Chicken Pizza

I cannot even tell you how many times stopping at the grocery store and picking up a rotisserie chicken has saved my life on busy weeknights when I have very little time to whip up dinner for my family.  Instead of hitting up a drive-thru, spending $5.99 for a deliciously seasoned and fresh rotisserie chicken just makes more sense. The ideas are endless, obviously... last week, I decided to make BBQ chicken pizza.  I was craving cilantro but wasn't in the mood for any of the obviously 'south-of-the-border dishes that would include cilantro.  :)
 
Ingredients:
 
Store-bought Pizza Crust
Your Favorite Barbecue Sauce
2 Tablespoons Olive Oil
1/4 Cup Chopped Cilantro
1/4 Cup Chopped Green Onions
2 Cups Mozzarella Cheese {or your favorite blend}
2 Cups Chopped Cooked Chicken
 
{This thin crust pizza crust by Pillsbury is so good!  It comes out perfect every single time.  I've even used it to make tarts and it worked like a charm.}
 
{I started by pulling the meat from the rotisserie chicken off the bone and chopping it into bite-size pieces.  Perfectly seasoned and cooked chicken. Such a perfect recipe starter.}
 
{I decided to use an oven-safe stone tray to make my pizza on and went with a free-form rectangular shape, to give it a fancy, rustic feel. :) I greased the tray with olive oil to aid in the crispiness.}
 
{POP! open your pizza dough.  You should see me when I have to open these things... scares me every time...you would think I am detonating a bomb. LOL!}
 
 
{Spread out your dough and lift slightly around the edges, creating a crust.}
 
{Lightly drizzle the dough with olive oil then your barbecue sauce. Our favorite is Sweet Baby Ray's. So good and doesn't need any doctoring up.  It's perfectly sweet and spicy.}
 
 
{Roughly chop your cilantro and green onions.  You can obviously omit the cilantro if you are not a fan, but of course I think it's a key ingredient. :)  I have also subbed the green onion with thinly sliced red onion and it was delicious!}
 
{Sprinkle the cilantro and onion on the bbq sauced crust.}
 
{Top with the chopped chicken.}
 
{Drizzle a little more bbq sauce over the chicken for additional flavor. Yum!}
 
{Mozzarella cheese is of course the traditional cheese for pizza but I used this "4 Cheese Pizza" blend from my grocery store and it was so good! The 4 cheeses are: Mozzarella, Provolone, Parmesan and Romano.}
  
{After the cheese is sprinkled, top it with a few cilantro leaves for garnish.}
 
{Bake it in a 400 degree oven for 12-15 minutes or until golden brown, crispy and delicious.}
 
 
 
{I served the BBQ chicken pizza with a salad of field greens, red pepper, Roma tomatoes and a balsamic vinaigrette. And wine for me, of course. :)
 
Making pizza at home always makes the kiddies feel so special.  And it couldn't be easier.

Easy Creamy Leek Potatoes

This recipe post seems a bit silly to me because it could not be easier.  These are the most simple yet DELICIOUS potatoes I have ever put in my mouth.  Lol!  No, seriously.  I admit that I overuse the word amazing but these truly qualify as AMAZING.  I made BBQ short ribs this past Sunday and {as usual} was struggling with the side dishes.  I was going to make mashed potatoes but remembered I had this leek soup mix packet in the pantry from the winter when I wanted to make potato leek soup. It was the perfect idea to whip these up because this recipe will now be a standby for my family.
 
Ingredients:
 
2-3 Pounds of Russet Potatoes
2 Cans Chicken Broth
1/2 Cup Milk
3-4 Tablespoons Butter
3-4 Tablespoons Heavy Cream {or milk}
1 Packet Knorr Leek Recipe Mix
 
{Start by peeling and thinly slicing your Russet potatoes.  Use as many as you wish - I used about 8 medium potatoes.}
 
{Admittedly, this leek recipe mix is pretty tough to find.  I had to check 3 stores back in January and finally found them at the Shop Rite.  The Knorr vegetable soup mix was pretty abundant but the leek, not so much.  But you HAVE to find it. LOL! Makes a world of difference.  I love using easy flavor shortcuts like these.  Recipe starters. The best!}
 
{Add 2 cans of chicken broth to a large pot to boil the potatoes in.  You could also just use water, but the stock adds flavor. :)}
 
{Add about 1/2 cup of milk to the broth.  Again, you could just use plain ole' water but I thought the milk+stock added to the creaminess and flavor of this dish.}
 
{Boil your potatoes in the broth/milk mixture until fork tender.  It shouldn't take too long since they were thinly sliced.}
 
{Once tender, drain off most of the milk/stock mixture, leaving about a 1/4 cup to create the moisture needed once you add the leek mix.  Add in a few tablespoons of butter once drained.}
 
{Sprinkle in the full packet of leek recipe mix.}
 
 
{Add in a few tablespoons of heavy cream {or milk}, or as much needed to create a creamy sauce.  Taste for salt and pepper and serve.} 
 
 
 
See!  I told you.  So easy and so so good.  As with all my flavorful recipes, I have to say it... this is a must try! :)  I pretty much ate this entire pot.
 
P.S. See that short rib up there? My brown sugar glazed bbq short ribs. DIVINE. I mean DIVINE.  Let me know if you would like a recipe post. :)  I need another excuse to make them.  My husband would be reallllllly happy, LOL!

I have never done well with auction sites like E-bay since I am definitely a “buy it now” type of person and the Poshmark app is great in that if you see something cute, you can simply push a button to buy it.  That can also be dangerous.  :)  I love that it’s interactive just like Instagram or Twitter would be.  “Posh Parties” go on every day {and all day} and are virtual, real-time shopping events dedicated to buying and selling a specific theme or brand.  It’s great for someone looking for a specific item {say, festive heels a party dress or a specific designer handbag}, the Posh Party in that theme would have what you are looking for!  It’s also great if you are looking to do a spring clean-up and sell some of the things that no longer work or have a place in your closet.  Check out additional information about how Poshmark works here.

Happy Friday!  I love love LOVE this pencil skirt.  The jersey fabric is very heavy and feels great on.   I love that it can be dressed up with heels {soon!} or worn casually with flats and a jean jacket. 
 
Isis's 10th birthday {double digits, yay!!} party is this weekend so it will be a busy and fun one.  :)

Metallic Splash

These flats get endless compliments and are SO comfy.  I've worn them every day since getting them last Friday. Lol! They look cute with everything. :) 

That has been my requirement now when adding shoes to my collection.  If they don't look cute with any and everything, they will not be purchased.  I love being able to throw shoes on while dashing out the door without thinking about if they "go" with what I have on.  Having a cute assortment of flats helps with that too.

Beauty Ramblings: The Perfect Vanity

For the longest time, I had been looking for the perfect vanity.  A traditional vanity.  One that had the mirror attached and was large enough to fit my crap and had ample drawers / storage space.  Well that perfect vanity never presented itself.  The traditional ones that I found were always so small and Victorian.  Not my style.  Cory and  I went to Ikea and found ourselves in the home office section realizing that the perfect vanity was actually a desk with a nice wide drawer and cubby holes on the side.  I saw this and fell in love!

It's the perfect size for our bedroom and my things actually look pretty on display and all arranged and in place.  :)  I added a bench and a simple square mirror hanging right above it ends up working just fine.  Done!




{I found these acrylic storage containers at The Container Store.  The tiered nail polish rack was in the kitchen section. ...for spices. :)}


(I just added Marc Jacobs' "Lola" to my small collection of perfume.  It smells like spring in a bottle. Adore!}


{It felt good to clean out and throw away the things that were old and would never get used.  I gave the polishes that did not make the cut to Isis; she was so excited.  Picking a color for my manicure is so much more fun now.}


{I love that everything has a place.  Especially these blush / powder compacts that were always just thrown into a make-up bag.}



{The lipstick compartments are my fave.  I was always digging in the bottom of 3 different bags looking for a shade of lipstick when I needed it.}



{These little cubby holes were an added bonus.}


{A nice long and deep drawer was a must for my vanity.  And this one is HUGE.  I have to get a few more of these drawer organizers.}



{The only left to do is get a small spotlight lamp for additional lighting.  I am pretty smitten with my new area.  It helps that I can see everything that I have which prevents me from spending unnecessarily on make-up.  Seriously, how many pink lipsticks does one really need? Lol!}
